"There is absolutely no substitute for the best. Good food cannot be made of inferior ingredients masked with high flavor. It is true thrift to use the best ingredients available and to waste nothing." - James Beard
I had a fortunate upbringing where I was allowed to sample wine with our dinner. No more than an ounce, but what an experience. I had a fondness for both wines red and white. Red, of course at the time was only meant to being drunk with meat. Where the white was with chicken or fish. They were always bold, crisp white wines and aromatic, deep, enriching reds. Later I was introduced to Port and instantly fell in love.
Now, as times have change I choose the wine of my liking with my food. I prefer red over white, yet there are times I like a refreshing cold glass of a crisp, possibly fruity white.
Wine is so personal.
